What a fun dessert for a party and for family dinners. Eclairs are a French pastry filled with la crème (pastry cream). You may think that you have seen these at your local donut shop, or grocery store. However, these are probably the simpler version called the Long John. They are made with donut pastry and filled with vanilla pudding.
An ‘official’ éclair is made by a baker who prepares pâte à choux (English translation: a prepared puff pastry). This dough is baked in a way that hollows out a giant cavity in the completed pastry. It is in this cavity where la crème is filled. What a delicious treat!
